APPLE COLESLAW
½ cup plain fat free
yogurt
1 apple, cored and
chopped
2 teaspoons sugar
½ small carrot, shredded
1 teaspoon prepared
mustard
½ stalk celery, thinly
sliced
1/8 teaspoon salt,
optional
1-1/2 cup shredded
cabbage
1 dash pepper
3 green onions, chopped
In a medium bowl,
stir together yogurt,
sugar,
mustard, salt and
pepper. Add apple
and stir
to coat. Add all
other vegetables;
toss lightly
until all vegetables
are coated. Chill
1-1/2
hours. Makes 4 servings.
