ROASTED GARLIC and ASPARAGUS DIP
2 bunches asparagus, tough ends trimmed
1 red pepper, sliced
3 cloves garlic, minced
1 small onion, sliced
1 tablespoon oil
Salt and pepper to taste
Preheat oven to 400 degrees. Combine first
four ingredients
in a roasting pan;
toss
with oil to coat.
Season with salt
and pepper.
Roast 30-40 minutes
until vegetables
are
tender. Enjoy.
